INGREDIENTS

2 med size courgette

2 tomatoes

2 Tblsp Tamari

2 Tblsp Umeboshi Vinegar

3 Tblsp Olive oil

White pepper to taste

PROCESS

Peel the courgette into long strips, I am using a potato peeler for this job. Place the courgette in a steamer over boiling water (lid on) until just soft, which takes no more then 3-5 minutes. Remove from the heat and place in a bowl and cover with the liquid ingredients immediately. Cut the tomatoes into bite size pieces and give a generous covering of freshly ground white pepper.
